After a 3 year stint as a student assistant at his alma mater, Eastern Oregon University, and then 1 year at the high school level, Coach Simi returned to EOU to coach from 1997-2001, working with current West Point Offensive Coordinator Ian Shields from 1997-1999.

The 1999 offense, led by Coach Shields and with Coach Simi as Offensive Line Coach, set over 30 school records.

Simi attended Eastern Oregon University and graduated with a BS in History in 1994.  He was a 4 year starter and 2 time all-conference player.
